This salad is Ahhhmazing! I promise.
This would be great for a dinner party, weeknight meal or if you bring this to pot luck it'll be a real show stopper! The best part about this recipe is the minimal preparation, so you could potentially prep the veggies and throw this meal together in 10 minutes! No joke.
The first thing we will do is to season the steak. Coat all sides of the steak with salt and let this sit overnight, preferably. If you are unable to let it sit overnight, just try to season it as soon as you can. I also like to add olive oil when I season.
While the meat is marinading, slice up two cloves of garlic, and slice open a jalapeno and remove seeds. Begin to finely chop the garlic and jalapeno together. After this is finely chopped, I recommend using a mortar and pestle to grind them down into a paste. If you do not have a mortar and pestle, you can use your knife to smash them into a paste as well.
After the paste is created, place into a small bowl and add 3 tablespoons of fish sauce and 3 tablespoons of honey and lime juice. Mix this mixture vigorously until the honey has completely dissolved. Salt to taste and set aside. This will become the dressing for the salad.
Now that we have the dressing ready, pour 2-3 tablespoons of the dressing over the steak and let this continue to marinate while you are preparing the vegetables.
Go ahead and slice the Persian cucumbers into thin rounds, cut the radishes into slivers, coarsely chop the mint and wash the arugula. Place them all into a large bowl and season with salt. Mix with your hands to ensure they are coated evenly.
Crush about 1/2 cup of peanuts and set aside.
Place a medium pot of water on the stove and bring to a boil. When the water is boiled, turn the heat off and place rice noodles in the water. Set timer for 6-8 minutes. When done, drain and rinse under cold water. Add these to the large bowl with seasoned vegetables and toss with pinchers. Add dressing and toss.
While the noodles are cooking, heat small cast iron skillet (Or any other skillet of choice) over medium-high heat and allow the pan to fully heat. When hot, coat with olive oil and place steak in the pan. Set timer for 3-4 minutes, depending on the thickness of the steak. (could need 5-6 minutes)
Flip steak and sear again on medium-high heat.
When steak is done, allow meat to rest prior to cutting.
Slice steak and plate your dish! Top with fresh mint and crushed peanuts, enjoy!
